The fabulous vineyards of Burgundy are defined by a complex mosaic of designated vineyards known as "climats". Many centuries ago, a few of them were noticed for the superior quality of their terroir, inspiring the owners to build stone walls around their perimeter. The idea was to protect these cherished "Clos" from unwanted visitors like animals or even thieves! These stone walls, built with the limestone dug onsite, may also have influenced the micro-climate within these vineyards by reverberating sunlight and heat, or even cutting the influence of wind, some crucial factors in farming.
This dinner is a focus on the Clos from all around the Côte d'Or but also Champagne with a flight of Philipponnat's Clos Des Goisses, a truly unique site, revered for producing alluring Champagne of power and depth.
Join us at Benoit for a "closer" look at these notable vineyards!

Laurent Vaillé has achieved what others thought impossible. Having spent his early career training under such masters as Jean-François Coche-Dury (Meursault), Gérard Chave (Hermitage), and Eloi Durrbach (Domaine Trévallon, Provence), he settled in the l’Hérault of the Languedoc and purchased his own land in 1989, near Aniane. Today, Laurent is regarded as the hero who put the Languedoc on the map, and proved that the region could produce very superior wines. Do not miss this important dinner and the opportunity to taste some of the first releases of the Domaine from the early 1990's, including three vintages of its very rare white wines sourced from a mere 1 ha vineyard.

Join Pressoir.wine and La Paulée for a dinner celebrating one of Burgundy's most legendary estates - Domaine Armand Rousseau in Gevrey-Chambertin.
Rousseau owns a remarkable 8 hectares of Grand Cru vines, including a large tranche of Chambertin, a nice chunk of Clos de Bèze, around 40% of the famed premier cru Clos Saint Jacques, and the monopole "Clos des Ruchottes" in Ruchottes-Chambertin. Under the stewardship of Eric Rousseau, the third generation to manage the domaine, the wines' reputation has soared ever-upward, and with Eric's daughter Cyrielle joining the team in 2014, we can rest assured that this family's incredible legacy is in good hands!
