Since the dawn of winemaking, production methods have evolved continuously, due to consumer taste, trends, and technological & scientific advancements. In recent years, one of the hottest topics has been whole cluster fermentation. Often favored for certain grape varieties such as Pinot Noir, Syrah, Grenache or even Merlot, this polarizing practice inspired us to dedicate a session on whole cluster winemaking, featuring what we believe are the best examples of wines from Burgundy made that way.
